Forums Ability to change your profile colours.

A few minutes before I posted this I thought it would be cool if you could change your profile theme such as White --> Black. Just to change it up a bit

I've seen a forum where this is an option, it is not fun.
This gives you the option to post threads half the forum can't read, it really skews feedback.

I think they're suggesting it for profiles only, or perhaps just how the user himself perceives the forums.

How would it be hard to read? Make the text there either the same as the profile colour (if it's lighter) or make it light grey or white.

No, you're not understanding, there's a color option that makes it readable in a default color for any colored theme, the issue is user error.
People post in all black or all white depending on their theme on the other forum, because they don't know about the other theme.
