The dialect that Korean students learn is called '표준어' or 'Standard Korean'. It is the dialect spoken in Seoul, the capital city of South Korea.
In the more southern areas are where things start to change, in the districts of 전라도 (Jeolla-Do), 경상도 (Gyeongsang-Do) and 제주도 (Jeju-Do).
In 전라도, nothing is SUPER drastic of a change, except for more usage of the word '거시기' (geo-shi-gi) which kind of translates to 'those whatever things'. It's used when you forget the name of something.
In 경상도, the intonation of language is harsher and more aggressive, and pronunciation of words can be said to be a bit 'lazier'. For example, when there are two vowels in one word, people from this district tend to make life easier by only dropping out one of the vowels.
However, in 제주도 dialect, the differences are massive.
Although 제주도 does speak Korean, 60% of the vocabulary used is not even influenced by it. It's more influenced by Japanese and Mongolian. For comparison, here are two sentences in Standard Korean, and in Jeju-Do dialect. These sentences mean the same thing 'You don't know what I'm saying, do you?'
Standard Korean: 뭐라고 말하는지 모르겠죠? (mwo-ra-go mal-ha-neun-ji mo-reu-get-jyo?)
Jeju Korean: 무신 거옌 고람 신디 몰르쿠게? (moo-shin geo-yen go-ram shin-di mol-leu-ku-ge?)
